Soman-247, if you are asking for information about Thailand, you need to post this under the proper heading. I think you meant to ask your question in the "Asia" forum, not "Africa". I'm sure someone there will have some suggestions and tips for you.

I have done a longer version of your tour that includes River Kwai, but we had the exact same choice of optional tours.

My advice is do all of them.

None are real expensive, and to a greater or lesser extent, all are pretty good and will round out your tour well. They are not all perfect, but interesting nevertheless. The Siam Niaramit show is a bit boring at times - what speech there is is not in English. The huge buffet meal you receive at the venue is really good with dozens and dozens of choices. The on-site outdoor museum is very interesting, and the pre-show in the courtyard is pretty good. It is hard to keep up with the plot if you don't know much about Thai history. I was jet lagged enough to doze off at times. The hill tribe thing is a bit contrived. The authentic tribe members basically gather at a purpose built site to entertain and sell to tourists. Some of their homes are at the site, but your do not get to go in. That would have enhanced the experience. The thai massage near the end is almost free compared to what it would cost anywhere else, and is super high end in a gorgeous spa with soothing music and gorgeous girls doing the massages. A trip highlight for us. We also did other foot and leg massages almost anywhere we found them. 30 min. for maybe $5.

What else would you like to know about this great trip?

And yes, you should repost in Asia - Pacific, not Africa.
