My partner and I are taking this exact cruise in July! Hope you have an amazing time, and you hopefully should have milder weather in May. I would be excited to hear how you enjoy your trip and what you thought of the Monarch Empress. Sure looks lovely from what I've seen so far!

I'm sure you have all of your travel plans in place, but if you're looking for a good tour guide book, The Lonely Planet pocket Budapest and Prague books are wonderful, compact guides and come with comprehensive fold out maps.

We decided to avoid the excursions to Salzburg and Cesky Krumlov and doing them on our own for a lot cheaper at the end of the trip. If you have time to do an overnight trip from Prague to Salzburg, Bean Shuttle is a great deal, and you get to spend about 4.5 hours in Cesky Krumlov as part of your transfer from Prague to Salzburg.
So much to see and do, but having pretty much a full day in each port sure helps. With only a day in Vienna, I would recommend bypassing the excursion to Schoenbrunn Palace as it's bit out of the way from all of the sites in the inner city near the Ringstrasse. There's a ton to see and do in this part of town!
If you haven't watched Rick Steves' Europe episodes for Vienna, Budapest, and Prague, you should check them out:

Have a fabulous time!
